abcsmoothieThis smoothie idea started from getting the beet season rolling and cooking them up in every which way possible. I've made roasted beets, sautéed beet greens, beet salad, so naturally it was time for a beet smoothie.

ABC stands for the key ingredients, and each letter is 2 amazing vitamin and mineral packed fruits or veggies:

A is for apple and avocado.

B is for beet and banana.

C is for celery and carrot.

Remember, that deep red color of the beets is nature's sign that they're packed with anti-oxidants. You can make this smoothie and freeze it for later, the flavors get even better with time.

Ingredients

  • 1 Apple
  • 1/2 Avocado
  • 1 Beet
  • 1 Banana
  • 1 rib of Celery
  • 1 Carrot
  • 1/2 cup of ice

Directions

1. Boil the beets if you haven't already. Cool and peel. I recommend using just 1 small beet for this smoothie, not to overpower other flavors. Cut up and add to a blender.

2. Add in 1/2 cubed avocado. Use more for creamier smoothie, use less if you want it less creamy.

3. Peel and chop 1 apple, add to the blender. Best flavor apples are semi-sweet, like gala or honey crisp.

4. Cut up one banana and add to the blender. Another option is to add frozen banana - in that case, skip the ice at the end.

5. Dice 1 rib of celery and 1 carrot and add these to the blender.

6. Final addition - 1/2 cup of crushed ice.

7. Pulse for 3-5 times, then blend for 30-40 sec.

This smoothie recipe is enough for 2 people.
