This recipe is part of my collection of apple inspired dishes. Pork is a tender cut of meat and can be easily overpowered by heavy ingredients, but apples, onions, thyme and dijon work beautifully together. Plus, a splash of maple syrup, to make it taste like fall. Pork is lower in calories and saturated fat than other meats. We are using pork chops here and if you can get some on the bone, the flavor is by far superior. It's savory, so goes well with plain sides like rice or potatoes. Add a fresh salad and you got a full meal!
Ingredients (serves 4):
- 4 thick pork chops (bone-in are better)
- 2-3 cloves of garlic
- 1/2 sweet onion (or yellow onion)
- 3 medium apples
- 1-2 tbsp olive oil
- 2 tbsp dijon mustard
- 2 tbsp thyme fresh or dry
- 1-2 tbsp maple syrup
- 1 tbsp kosher salt
Directions:
1. Preheat your oven to 400 F.
2. Mince garlic, dice onions and peal and chop your apples.
3. Heat 2 tbsp of oil in a skillet (ideally, oven proof).
4. Cook onions first, then add garlic, then apples. Stir frequently and reduce heat if browning too much.
5. In the meantime, mix 2 tbsp dijon, salt and thyme. Wash/pat dry your pork chops and cover them with the dijon mixture.
6. Add 1-2 tbsp of maple syrup to the onions, stir for a minute and remove from the skillet onto a plate.
7. Place pork chops onto the skillet. Cook about 2-3 minutes on each side, just to brown slightly.
8. Cover the pork chops with the apple-onion mixture and put the skillet in the oven for 20 minutes. Alternatively, if you don't have an oven-proof skillet, move the pork chops onto a baking sheet and place in the oven.
