Kale is an undisputed superfood. Packed with nutrients - vitamins A & K, fiber, folate, potassium, calcium, to name a few. However, I am not a fan of the taste of raw kale. You say "blend it"? Well, there are a few other options. First, you can saute it, but you can also dress it right & mix with other high-fiber and vitamin-packed fruits & veggies. Don’t forget about the power of color! We eat with our eyes first!
Serves 2-3 people
Ingredients:
- 3-5 cups of kale, chopped if you like
- ½ apple
- 1 tomato
- ½ cup edamame
- ½ avocado
- 1 cup chopped red cabbage
- 1 tbsp dijon mustard
- 1-2 tbsp olive oil
- 1 tbsp honey
- 1 tbsp apple cider vinegar
- salt & pepper to taste
Directions:
1. Add kale to your salad bowl.
2. Mix the dressing: dijon mustard, olive oil, honey & apple cider vinegar.
3. Massage the dressing into kale.
4. Add edamame & chopped avocado.
5. Add chopped red cabbage, tomato and apple (peeled & diced).
6. Finally, salt & pepper to taste.
7. Stir & Enjoy!
