
The idea for this recipe came to me after a trip to a farmer’s market. Part of my haul included fresh raspberries from Michigan. Our neighboring state is one of the best for berries! These raspberries are a bit tart, a bit sweet, and so full of flavor and color. They are also rich in fiber, which most people don’t get enough of. I combined my raspberries with chia seed and a bit of honey, topped with dark melted chocolate and it was the most perfect treat. You don’t have to add honey but my chocolate was over 90% dark, so I needed a higher degree of sweetness. Chia seed is full of healthy omega 3 fats, is a complete protein (= keeping you fuller for longer) and a great source of calcium and magnesium (for healthy bones). More importantly, it was one of the most delectable desserts I’ve had in a while!
Macros (per serving, approx): 20g fiber, 10g protein, 20g fat, 35g carbs
Ingredients:
- 1 cup raspberries
- 2 tbsp chia seed
- 1 tsp honey (if needed)
- ¼ cup or more of dark chocolate
Instructions:
1. Mash the fresh raspberries (with a fork).
2. Mix in 2 tbsp of chia seed and stir to consistency.
3. If using extra dark chocolate and you want more sweetness, add 1 tsp honey. Stir and refrigerate for 30 minutes or more.
4. Melt ¼ cup or more of dark chocolate in a microwave.
5. Pour the chocolate over the raspberry mixture and return to the fridge until ready to eat. Enjoy!
