This salmon recipe is my go-to for a quick dinner. Everyone in the family likes it and it’s a snap to make. Salmon brings the amazing omega-3 fats to the table, a great source of healthy fat and rich in protein. I prefer Norwegian salmon and go for sustainable first. Wild salmon is a different texture and much faster (half time) to bake but I don’t think dijon goes as well with it. If I were to make a wild salmon, I’d make it simple with just a pinch of salt and a squeeze of lemon. This Dijon salmon shines because it’s a perfect company - dill, lemon, dijon - magic trio for this (and many other types of) fish. Let me know how you like it in the comments!
Ingredients (serves 3-4):
- 1 lbs salmon
- Juice of ½ lemon
- 1 small bunch of dill (stems removed)
- 1 tbsp dijon mustard
- 1 tbsp honey
- 1 tsp coarse salt
- 1 tsp paprika
Directions:
1. Preheat the oven to 375 F.
2. Spray a flat baking sheet with olive oil spray or use parchment paper, place salmon on it.
3. Mix dijon, honey, salt, paprika, lemon and chopped dill.
4. Coat your salmon with the dijon dill mix.
5. Bake uncovered for 15-20 min. Enjoy!
