This recipe is simple as day. In fact, when it comes to seafood, less is better, so the fresh sea taste can shine through. This fennel dill cod recipe is a star in my book because I get to use fennel, which I am slightly obsessed with and use in other recipes like this Red cabbage salad. I don't overcomplicate things and only just add dill, lemon, olive oil, salt and paprika. Simple seafood recipe for you, and ready in less than 30 minutes.
Ingredients
Serves 2-3
- 1 pound cod or other mild fish
- 1/2 fennel bulb diced
- a few sprigs fresh dill chopped
- 1-2 tbsp EV olive oil
- 1/2 lemon, squeezed
- 1 tbsp paprika
- 1 tbsp coarse salt
Directions
1. Preheat oven to 400 F.
2. Rinse fish, pat dry. Place on the oiled baking sheet.
3. Sprinkle chopped fennel bulb (raw) and chopped dill evenly over the cod.
4. Squeeze the juice of half a lemon. Season with paprika and salt. Drizzle with olive oil.
5. Bake in 400-degree oven for 15-20 minutes. I like a thicker cut of cod, so it usually takes 20 minutes. Thinner fish may overcook, so watch it as it bakes, 12-15 minutes may be enough. Once ready, you 'll see the distinctive flakiness. Enjoy!
