Swiss chard is one of my favorite sides for a comfort food kind of meal. It so easily blends with other ingredients and is a powerful source of amazing vitamins like K, A, C, and micronutrients like magnesium, potassium and iron. 1 cup of swiss chard will earn you 5 grams of fiber (15% of what you need for the day), and since it gets smaller as it cooks, you might even get 2 cups or 10 grams of fiber with your dinner! That’s what I call a win for your digestion. This recipe is just 4 ingredients, done in less than 15 minutes!
Ingredients:
- 1 bunch of swiss chard (rainbow chard is fine too)
- 3 cloves of garlic
- 1 tbsp sesame seed oil
- 1 lime
- 1 tbsp kosher salt
Directions:
1. Mince 3 cloves of garlic. Let is sit to release more flavor.
2. Rinse, dry and chop swiss chard, including the stems (½ inch or so).
3. Heat a large pan and add 1 tbsp sesame seed oil.
4. Add the garlic to the pan and stir quickly. Don’t let it burn unless you love the taste of burnt garlic.
5. Soon after, add the chard. You can do it all at once or in sections, letting a portion cook out and adding more.
6. Squeeze the lime and add salt, stir.
7. Cover and cook on low heat for 7-10 min, until wilted. It pairs well with pork and potatoes but will wake up any meal.
