Spring Colors Frittata

If you are looking to add more protein to your diet, eggs are a natural choice. That’s why I like making frittatas - you can add any vegetables you like, pour eggs and bake. You will have breakfast for days! Or, serve it on a weekend as a beautiful surprise

Ingredients:

  • 6-8 eggs
  • 1 cup shredded red cabbage
  • 1 cup roasted vegetable of choice
  • 1 cup grape tomatoes
  • ½ grated parmesan (optional)

Directions:

1. Preheat the oven to 400 F.

2. Spray a baking pan with cooking spray..

3. Sprinkle roasted butternut squash (using leftovers here), shredded/diced red cabbage and grape tomatoes.

4. Whisk the eggs and pour over the veggies. Distribute veggies evenly as needed.

5. Bake for 20 minutes at 400 F. Add parmesan 5 minutes before done (optional).
