Mushrooms have a knack for elevating other ingredients. Zucchini are high in many nutrients and antioxidants, including vitamin B6 and lutein. But let’s face it, they can be dull. So I am using a combination of mushrooms, onions and parmesan to make it a little more exciting. It looks and tastes beautiful. You can make them in the oven or on the grill - just reduce the time if using the grill. Serves 4
Ingredients:
- 2-3 large zucchini
- 1 cup mushrooms of your choice
- ¼ white or yellow onion
- 1 cup parmesan cheese
- 1 tbsp olive oil
- 1 tbsp salt
- 1 tsp paprika
- pepper to taste
Directions:
1. Preheat the oven to 425. Spray baking pan with cooking spray.
2. Finely chop the onion and mushrooms.
3. Heat a small pan and add olive oil to coat.
4. Add onions to the pan and cook to golden, stirring frequently.
5. Add chopped mushrooms to the pan, stir and cook for 2 more minutes.
6. Slice the zucchini in half and scoop the seeds and flesh using a sharp spoon or corer.
7. Add the zucchini core to the mushroom mixture, stir and cook for another minute.
8. Season with salt, pepper and paprika, stir.
9. Scoop the mushroom mixture and place it evenly into the zucchini halves. Sprinkle with parmesan.
10. Place in the 425 oven for 30 minutes.
