Zucchini Boats

zucchini boatsMushrooms have a knack for elevating other ingredients. Zucchini are high in many nutrients and antioxidants, including vitamin B6 and lutein. But let’s face it, they can be dull. So I am using a combination of mushrooms, onions and parmesan to make it a little more exciting. It looks and tastes beautiful. You can make them in the oven or on the grill - just reduce the time if using the grill. Side note - zucchini were part of the veggie box I got from Fresh Midwest and you can find other recipes I cooked from the box on the Recipe page and also on the YouTube channel.
