Avocado is a little powerhouse. I add it to dinner recipes, make a breakfast avocado toast with an egg and capers on top, and it's a great fat addition to my smoothies. Avocados are a wonderful source of potassium, fiber, and most importantly monounsaturated fat, which reduces your cardiovascular risk.
Today I am making the most common recipe using avocado - guacamole.
Sometimes, avocados are too firm (not ripened yet) to be mashed and used in a recipe like this. The trick to help them ripen is to put them in a brown bag with an apple - your avocado will be ripe in a day or 2.
You’ll notice I don’t use jalapenos - this recipe is kid-friendly and my kids don’t like spicy foods. However, I use the salsa to add a bit of heat and you can choose a spicier kind of salsa. Green tomatillo is a great choice.
Ingredients:
Serves 6-8 people
- 2 ripe avocados
- 1/4 onion (red onion preferred)
- 2 small cloves of garlic
- Small bunch of cilantro
- 1 lime, juiced
- 2 tbsp of your favorite salsa
- 1 tsp coarse salt (or more if you need after tasting)
Directions
1.Mash your avocados. You can use a fork or use a potato masher like I do. This is where you decide how chunky you want your guac.
2. Dice your red onion and mince 2 cloves of garlic. Let it sit a few minutes. Add to the avocado.
3. Juice 1 lime and add to the avocado.
4. Chop cilantro and add to the mixture.
5. Add 2 tbsp of your favorite salsa. I recommend tomato-based.
6. Add 1 tsp salt, mash and taste it. Add more salt if necessary.
7. Stir and enjoy with crunchy vegetables or in tacos. Reserve the pit to store your guacamole - it helps it keep the nice green color and prevents it from turning brown.
